To celebrate the end of the year in style, Chamarel Restaurant presents two exceptional menus designed as a tribute to local products and the island's rich culinary heritage. With Mauritian inspirations, contemporary touches, and subtle pairings around Chamarel's iconic ingredients, the restaurant invites you to a festive experience that balances elegance and authenticity.
For Christmas dinner on December 25th, the experience begins with a baked mussel topped with garlic and dill butter, followed by smoked duck breast served with a spiced cherry compote, pomegranate vinaigrette, and toasted macadamia nuts. As the main course, diners can choose between a herb-crusted lamb loin with roasted sage butternut squash puree, red wine and black garlic sauce, or a maple-glazed fish fillet with saffron risotto and citrus-infused asparagus, while the vegetarian option features stuffed mushrooms, smoked beetroot, and truffle saffron risotto. This symphony of flavors concludes beautifully with a cacao and Chamarel rum dessert, a delicious homage to the region's terroir.
The New Year’s Eve menu celebrates products such as Madagascar shrimp, red tuna from our lagoons, and cacao from the Seven Colored Earths. It starts with poached shrimp in a citrus gel, yuzu, and crispy rice, followed by red tuna carpaccio enhanced with palm heart, pomelo, crispy quinoa, and ponzu pearls. For the main course, guests can choose between a beef fillet with spicy cassava puree, glazed vegetables, and red wine sauce infused with cacao from the Seven Colored Earths, or a fillet of "Vieille grise" with pea puree, confit fennel, white wine butter with passion fruit and ginger.
The vegetarian option offers a creative local interpretation, from compressed watermelon to mint polenta cake. The journey concludes with a mango and lychee dessert – almond dacquoise, lychee compote, mango mousse, and coconut ice cream, providing a final touch that is as fresh as it is delectable.
